Middle Neck Clams - Sebastian Pick-up
We are collaborating directly with Florida shellfish farmers on both coasts to bring you sustainably raised hard clams. Florida-grown hard clams boast a mild, sweet, and briny flavor, reminiscent of the clean coastal waters they’re cultivated in. Their natural oceanic essence complements a wide range of culinary creations, from simple raw preparations with lemon and mignonette to more complex pasta dishes, chowders, and stews. The tender meat offers a subtle sweetness that balances perfectly with a hint of salt, making each bite a refreshing and savory experience.

FARMING METHOD

Clams are grown in mesh bags directly on the seafloor in shallow coastal waters, where they naturally feed on plankton. This eco-friendly, sustainable method supports healthy marine ecosystems by improving water quality, requiring no added feed, and minimizing environmental impact, while ensuring a renewable source of seafood.

STORAGE INSTRUCTIONS
-
Refrigeration: Store live clams in the refrigerator at 35-40°F. Keep them in a breathable container (such as a mesh bag or loosely covered with a damp towel) to allow them to stay alive. Do not store clams in airtight containers, as they need to breathe.
-
Avoid Water: Do not submerge clams in fresh water or seal them in plastic bags, as this can kill them. Keep them dry and cool.
-
Consume Quickly: For the freshest flavor, consume live clams within 24-48 hours of purchase. Discard any clams that remain open and do not close when tapped, as this indicates they are no longer alive.
-
Freezing Option: If necessary, shucked clam meat can be frozen. Place it in an airtight container and store in the freezer for up to 3 months. Thaw in the refrigerator before use.
